“Fully-estate grown, our first vintage entirely from the Pressing Matters property. This small-batch Chardonnay is crafted from only a small block of hand-harvested grapes.
The whole bunches are pressed and directly transferred into oak for wild fermentation. 20% of the oak is new, while 80% is seasoned. This gives the wine a round balanced body and distinctive texture.
The Chardonnay undergoes 40% malolactic fermentation, which adds a soft, creamy finish. It is aged for 7 months on lees in barrel with occasional lees stirring, followed by 2 months of tank settling. This results in a wine with a unique and refined tasting experience.” – Pressing Matters

Nose:
On the nose, the wine is full of white nectarine, lime pith and hints of grapefruit zest. There are also hints of vanilla, nutmeg and struck match.
Palate:
On the palate, there's a briny edge reminiscent of green olive and chipped oyster shell. A lively, taut acidity is perfectly balanced by a rich, cashew butter texture on the finish.
