Nick O’Leary Denison Chardonnay

Crafted with the utmost care, the grapes for this Chardonnay are handpicked and gently pressed as whole bunches. The use of wild yeast fermentation and the extended period on lees allows for a full malolactic fermentation, enhancing the wine’s character. The result is a Chardonnay with vibrant flavours, elegant structure, and a delightful balance.

The nose is deep and rich with flavours of baked peaches, grapefruit pith, yellow nectarine, apple pie and flint. The palate presents lighter fruits with white nectarine, fresh peaches, hazelnuts, almond, lemon curd. Texturally it is still quite lean, but this will change over time.

With a focused acid structure it is a wine that is built to last. So much flavour packed into each mouthful you’ll notice a new nuance each sip.
