Hand-picked, free-run juice only, with extended lees ageing for texture and purity. White flowers, talc and lime blossom — delicate and compelling. Textural and layered, chalk-driven minerality frames an integrated lime core with quiet intensity. Precise and unadorned — extended lees ageing reveals rather than masks the site’s ancient geological character. The finish lingers — pure, dry, and fine.

Palate:
Savory. It exists more on the spice register than the fruit; it speaks of turmeric and dried mint, crushed fennel seeds and something toasted, like wood-fired chestnuts. There are notes of pink grapefruit, dried lavender, lime zest and seaside daisies.
