Recioto della Valpolicella wine is made ​​of grapes Corvina, Rondinella and Korvinone growing in Fondo Chereolo, Monte Tenda and Castello at an altitude of 140-290 m above sea level. The fermentation with selected yeasts, after 24-26 hours of cold maceration takes place in stainless steel tanks with thermal control, and about the middle of the wine is poured into new French oak barriques, where slowly fermented until late spring. The wine is removed from the large sediment and returned to the same barrels for 10 months for aging. Before bottling the wine is clarified and filtered.
