Hand-picked, open-fermented, pressed via a 97yo basket press, the individual vineyard components (from McLaren Vale and Clare Valley) matured separately in French oak (25% new) for 16 months. Very skilled winemaking, particularly at the blending stage, results in a vinous have cake and eat it outcome. Allows the dark chocolate and plum flavours of McLaren Vale to show in wine, with particularly good texture and structure ex the Clare Valley portion.
