The hand harvested fruit was fermented in open top concrete fermenters with chilled ferments, hand pump-overs and cap submerging with oak header boards for eight days; the process finished with barrel ferment and malolactic fermentation in new French oak.

The nose shows dark chocolate and black fruits and olives, with the palate continuing the theme, showing these typical Barossa Cabernet Sauvignon characters, giving weight and generosity to the wine. Ripe tannins add structure while being supple and mouth watering." – Elderton

Nose:

Intense ripe blackcurrant and subtle liquorice aromas are laced with cigar box and black olives followed by fresh tobacco and spice notes.

Palate:

Bold rich blackcurrant and liquorice flavours fill the mouth melding into cigar box, dried herbs, subtle black olive and spice characteristics. The sturdily built tannins provide a strong backbone. Excellent power, slightly chewy on the finish with a lengthy aftertaste of ripe blackcurrant, liquorice, cigar box, black olive, dried herbs and spice.
