Chalk Hill Tempranillo Grenache
Warm, brooding spices – clove and anise – open up to cherry and mixed berry fruit characters, flowering herbs, rose florals, and a hint of pepper. The palate is medium-bodied and fine, showing dark cherry, red berries and pomegranate mix with thyme, bay leaf, and some warm earthy spice. The wine has fresh acidity and a long, clean finish. This wine drinks well young, but will cellar for 5 years.
Each varietal was handled separately –
Grenache: Two parcels of Grenache are from 35- and 50-year-old vines in Blewitt Springs. Tempranillo is from our Willunga vineyard and the cooler foothills above McLaren Flat. And the Graciano is from our Slate Creek vineyard in Willunga.
All parcels fermented in open fermenters for 7–10 days using cultured yeast. Gentle pump-overs twice daily throughout. After fermenting to dryness, wines were pressed off skins and transferred to older French oak puncheons and hogsheads. No new oak used.
