Nick O’Leary Tumbarumba Chardonnay
Sourced from three of Tumbarumba’s oldest vineyards; Johansen/Glenburny, Wondalma and Tooma. Grapes are handpicked and whole bunch pressed straight to 35% new French barriques and puncheons – balance to 1 to 4 year French barriques. Wild yeast fermented and left on lees to go through full malolactic fermentation. The wine is then kept on lees. Barrels are stirred and topped weekly.
