On the southernmost tip of the North Island of New Zealand, under the watch of the iconic Cape Palliser lighthouse, they blend pure mountain spring water with hand-zested naval oranges, yen ben lemons and hints of native botanicals - including leaves of the peppery native botanicals - to create a premium gin of exceptional flavour and complexity.
