Caol Ila Distillery is famous for the stunning view from its still house windows looking out across the Sound of Islay and for the objects which have passed by including naval battleships, submarines and whales.
Caol Ila was established in 1846 by Hector Henderson on a sheltered but rocky stretch of coast on north east Islay. Now the largest malt whiskey distillery on Islay it produces peated and some un-peated malt whiskey with the distillery range including Caol Ila 12 year old and the Distiller's Edition. Caol Ila participates in Feis Ile, the annual Islay Festival of Malt and Music.

American-oak hogsheads and ex-bodega European oak butts.
Nose:
Opens with marmalade-laden buttery toast, milk chocolate and fresh orange notes, before red cherry, strawberry and raisin comes through. Lashes of vanilla and a suggestion of spearmint, too.
Palate:
Leads with more of that creamy chocolate, fruity yoghurt and honey. Peach is in there too, and in with all the oiliness is a pine-like quality.
The finish has yoghurt-covered almonds with some liquorice and, yes, some distant smoke.
