Warramate Cabernets
Drawn from selected blocks across the vineyard, incorporating fruit from nine vineyard blocks and five varieties. Some vines date back to 1990, contributing complexity and character to the blend.
Hand picked, sorted and destemmed into a series of small fermenters. Cabernet Sauvignon berries are lightly crushed to aid tannin extraction, while Merlot, Malbec and Petit Verdot undergo whole berry fermentation to enhance fruit purity and plushness. Cabernet Franc is fermented and matured in clay amphora, adding further complexity to the blend. Hand plunging throughout fermentation allows for the gentle extraction of colour, flavour and texture.
