Drawn from selected blocks across the vineyard and blended from Old Vine, 1654, Best’s Old Vine and Tahbilk clones. Together they contribute vibrant fruit, spice, structure and aromatic lift.
Whole berry fermentation with a portion of whole bunches contributes a succulent fruit profile, aromatic lift and fine tannin structure. Hand plunging throughout fermentation allows for the gentle extraction of colour, flavour and texture. The wine was matured for 15 months in French oak, including 10% new oak, providing subtle complexity while allowing the fruit to remain the focus.
