85% Nebbiolo and 15% Pinot Noir from the Hilltops. Quick 3-hour press cycle, not held on skins or stems that would attribute tannins to the wine. The juice was 50% cool fermented in stainless steel, whilst the balance naturally fermented in seasoned barriques. The wine was held on full lees until bottling in May.
